Great recipes that make fats/oils not only favors to flavor but healthy for you, too!

Lisa Howard is truly a culinary artist and expert, and on top of that, she is a researcher and an author that cares about her readers. What I find fascinating in this book is that it not only provides beautiful recipes, it also informs wise readers about the best way to use oils and fats safely for health and well-being.
"Fat" as a general classification has for far too long been generally maligned. This has unfortunately resulted in a population of people who have ignored oils and fats and have been missing out on their health benefits (yes benefits!), inadvertently misusing them (resulting in health risks), and who are sadly unaware of the dangers of damaged fats/oils (heat, light, time, pressure, and chemical processing result in not only rancidity but can promote premature aging, inflammation, resistant weight-loss, and can contribute to many disease processes). Fortunately, fats/oils used wisely can help with health (for example, certain fats are anti-viral, anti-microbial, anti-bacterial, facilitate much needed fat-soluble nutrient absorption, and stimulate satiety (so you don't overeat)) ... What an eye opener!

This book is definitely an eye opener and extremely interesting! I myself am quite knowledgeable about healthful dietary intake but Lisa Howard has uncovered the sad truth about what Big Food has done to fats that we purchase. Many of us have gotten it wrong, including nutritionists. Kudos to Lisa for her investigative efforts that have revealed the very sad truth about dietary oils/fats. The recipes are nutritious AND tasty and it is worth buying just to become informed about things that we would not otherwise be privy to. The recipes are a bonus and will help with proper nutrition and weight control!

I found this book very interesting and extremely informative. Sections describing the various oils and how they are produced is very helpful when shopping. The sections about oil temperature and various oils reaction to heat for cooking is valuable. Anyone who who cooks with oil or prepares dishes such as salads using various oils will find this a reference they will come back to again and again. I enjoyed it and keep it near my cooking area for future reference.
